Job Title: Commis I (Baker)

Reports To: Demi Chef de Partie, Chef de Partie, Head Baker

Job Summary:
The Commis I is an entry-level position in the bakery, responsible for providing essential support to the senior bakery team. The primary focus is on learning fundamental baking techniques, maintaining the highest standards of cleanliness, and preparing basic ingredients and items under strict supervision. This role is the foundation for a career in the pastry and bakery arts.
Key Responsibilities:
Food Preparation & Production:

  • Prepare basic bakery ingredients as directed (e.g., washing fruits, zesting citrus, weighing and measuring flour, sugar, and other dry/wet ingredients).
  • Assist in the production of simple items such as bread rolls, scones, muffins, and cookie batters.
  • Learn to scale recipes accurately under supervision.
  • Assist in the preparation of fillings, creams, and simple syrups.
  • Package and label finished products correctly.
Cleaning & Maintenance:
  • Maintain impeccable cleanliness and sanitation in all work areas, including workstations, equipment, and floors.
  • Wash, sanitize, and store all baking tools, utensils, pots, and pans.
  • Assist in breaking down and cleaning all bakery equipment at the end of the shift (e.g., mixers, proofers, ovens).
  • Adhere to all HACCP and food safety standards, including proper food labeling, storage, and rotation (FIFO).
Learning & Development:
  • Actively learn and memorize standard recipes, methods, and procedures used in the bakery.
  • Develop a basic understanding of bakery terminology and ingredient functions.
  • Observe and learn from senior bakers and chefs.
  • Follow all instructions carefully and ask questions when in doubt.
General Duties:
  • Receive and store bakery deliveries, ensuring they are placed in the correct storage areas.
  • Ensure all mise en place is completed for the next shift or service period.
  • Adhere to all kitchen policies, procedures, and safety regulations.
  • Perform other related duties as assigned by the supervisor.
Qualifications & Experience:
  • A high school diploma or equivalent.
  • A culinary or bakery certificate from a recognized institution is preferred but not mandatory.
  • Little to no professional bakery experience required; a strong willingness to learn is essential.
  • Basic understanding of English (verbal) to follow instructions.
Skills & Attributes:

  • Ability to work efficiently in a fast-paced, hot environment.
  • Good time management and the ability to follow directions precisely.
  • High standards of personal hygiene and cleanliness.
  • Team-oriented mindset.
