COMMIS CHEF (Hot Section)
Reports To: Chef de Partie of their assigned station / Demi-Chef de Partie
Summary:
A Commis Chef is an entry-level or junior chef who works under the direct supervision of a CDP or DCDP to learn the fundamentals of the kitchen and their specific station. They are primarily responsible for basic food preparation and maintaining cleanliness.
Key Responsibilities:

  • Basic Preparation: Perform basic prep tasks as directed by the CDP/DCDP, such as washing and chopping vegetables, preparing stocks, butchering basic cuts, and weighing ingredients.
  • Mise en Place: Assist in setting up the station for service.
  • Cleanliness: Keep their assigned station clean and organized at all times, following hygiene protocols.
  • Learning: Observe senior chefs and learn cooking techniques, recipes, and plating styles. They are in a training role.
Qualifications:
  • A culinary school student or recent graduate.
  • A strong desire to learn and a positive attitude.
  • Basic knowledge of kitchen safety and hygiene.
  • Ability to follow instructions precisely.
