Commis Chef
Reports to: Chef De Partie / Sous Chef
Job Overview:
The Commis Chef is an entry-level position within the kitchen brigade, designed for a culinary graduate or trainee. This role is fundamental to the smooth operation of a specific section. The Commis is responsible for supporting the chefs de partie by performing basic cooking and preparatory tasks, maintaining impeccable cleanliness, and learning the fundamentals of professional cookery. This position requires a strong work ethic, a willingness to learn, and a passion for the culinary arts.
Key Responsibilities:

  • Food Preparation: Perform basic preparatory tasks as directed by senior chefs, including washing, peeling, chopping, and cutting ingredients according to established standards.
  • Mise en Place: Ensure the assigned section is fully prepared for service by having all necessary ingredients, prepped items, and equipment ready. This is a critical, ongoing duty.
  • Station Support: Assist the Chef de Partie during service by cooking simple items (e.g., fries, vegetables, basic sauces) and ensuring they are plated correctly and promptly.
  • Cleanliness & Hygiene: Maintain the highest standards of cleanliness and sanitation in all work areas. This includes cleaning work stations, equipment, floors, and storage areas.
  • Stock Rotation: Assist in receiving and storing deliveries correctly. Follow the FIFO (First-In, First-Out) system to ensure ingredient freshness and minimize waste.
  • Equipment Care: Learn to use kitchen equipment safely and correctly. Assist in the basic cleaning and maintenance of this equipment.
  • Learning & Development: Actively listen, learn, and apply techniques, recipes, and standards taught by senior kitchen staff. Show progression and a desire to advance.
Qualifications & Skills:
  • A culinary school diploma or equivalent in-progress training is highly desirable.
  • No extensive professional experience required, but any kitchen exposure is beneficial.
  • Basic understanding of food hygiene and safety principles.
  • Ability to follow instructions precisely and work efficiently in a fast-paced, high-pressure environment.
  • Physical stamina to stand for long periods and handle a busy service.
  • Strong teamwork and communication skills.
  • Positive attitude and eagerness to learn.
