Commis 1 (Hot Kitchen / Bakery / Pastry)
Position: Commis 1
Department: Kitchen / Culinary
Reports to: Chef De Partie / Sous Chef
Job Summary:
The Commis 1 is an entry-level chef who works under the guidance of a Chef De Partie or Demi Chef to learn all aspects of the kitchen. They perform basic food preparation tasks and are responsible for maintaining the cleanliness of their assigned area.
Key Responsibilities:

  • Perform basic food preparation tasks, such as washing, peeling, cutting, and chopping ingredients.
  • Prepare simple dishes (e.g., salads, appetizers) as directed by senior chefs.
  • Learn and assist in different kitchen stations (Hot Kitchen, Bakery, or Pastry).
  • Maintain a clean and sanitary workstation, including counters, shelves, and equipment.
  • Receive and store deliveries, ensuring proper rotation (FIFO).
  • Follow all recipes, portion controls, and presentation specifications as set by the restaurant.
  • Adhere to all health, safety, and hygiene policies.
Qualifications & Skills:
  • Culinary school education is highly desirable.
  • Some experience in a kitchen environment is beneficial but not always required.
  • A strong desire to learn and develop culinary skills.
  • Ability to follow instructions and work as part of a team.
  • Basic knowledge of food hygiene and safety practices.
  • Physical stamina to stand for long hours and work in a hot, fast-paced environment.
