The Chef Tournant / Multi-Skilled Commis I is a versatile culinary professional responsible for supporting the kitchen operations by working across various stations, ensuring the delivery of high-quality dishes, maintaining cleanliness and safety standards, and assisting in the training and development of junior staff. This role requires a flexible, skilled, and proactive individual capable of adapting to different sections of the kitchen as needed.
Key Responsibilities:
Food Preparation and Cooking:
Assist in preparing and cooking a variety of dishes across different sections such as hot, cold, pastry, and grill, ensuring consistency and presentation standards are met.
Station Rotation:
Seamlessly rotate between different kitchen stations based on the needs of the service, demonstrating multi-disciplinary skills.
Quality Control:
Ensure all dishes leaving the kitchen meet the established standards for quality, presentation, and taste.
Cleanliness and Hygiene:
Maintain cleanliness and hygiene standards in accordance with health and safety regulations, including proper handling of ingredients and cleaning of work areas.
Inventory and Stock Management:
Assist with receiving, storing, and rotating stock; notify management of low supplies or discrepancies.
Team Support:
Support and collaborate with other kitchen staff, including Commis I and II, demi-chefs, and sous chefs, fostering a positive and efficient work environment.
Compliance:
Follow all safety, sanitation, and food hygiene policies and procedures.
Training & Development:
Assist in training junior staff and interns, sharing knowledge and best practices.
Innovation:
Contribute to menu development ideas and suggest improvements to kitchen operations.
Qualifications & Skills:
Proven experience in a professional kitchen, preferably in a similar multi-station role.
Culinary diploma or equivalent certification preferred.
Strong understanding of food safety and hygiene standards.
Ability to work efficiently under pressure in a fast-paced environment.
Flexibility and adaptability to switch between different kitchen sections.
Good communication and teamwork skills.
Attention to detail and a passion for culinary excellence.
