Role Overview:
As
Chef de Partie (CDP)
- Main Kitchen, you will be a key contributor to the day-to-day culinary operations. You will be responsible for leading a section within the main kitchen, ensuring high standards of food preparation, hygiene, and presentation are maintained at all times. This is a hands-on role ideal for passionate, quality-driven chefs who thrive in a dynamic, high-pressure environment.
Key Responsibilities:
Manage a specific section of the main kitchen (hot/cold/larder/sauce), under the direction of the Sous Chef.
Prepare and present dishes according to standard recipes and hotel guidelines.
Supervise Commis and Demi CDPs, ensuring consistency and quality in every plate.
Assist in menu development, mise en place planning, and daily ordering.
Maintain strict hygiene, sanitation, and safety standards in compliance with HACCP and Saudi regulations.
Ensure proper storage, labeling, and rotation of food products.
Coordinate with Stewarding and Service teams for smooth kitchen operations.
Contribute to training and mentoring junior kitchen staff.
Maintain inventory and reduce food wastage through proper planning and portion control.
Attend daily briefings and participate in continuous improvement discussions.
Qualifications & Experience:
Diploma or Certification in Culinary Arts from a recognized institute.
Minimum
3-5 years of experience
in a 5-star luxury hotel or fine-dining kitchen, with at least 1 year as a CDP.
Strong knowledge of international cuisine, plating techniques, and high-volume kitchen operations.
Experience working in multicultural, fast-paced environments.
Sound understanding of food cost control and kitchen safety standards.
Fluent in English; basic Arabic knowledge is a plus.
HACCP Certification is an advantage.
Willingness to relocate to Riyadh and adapt to local customs and cultural norms.
