Chef de Partie (Station Chef)
Job Overview:
A Chef de Partie is in charge of a specific section in the kitchen (e.g., saute, grill, pastry, fish). They are responsible for preparing all dishes from that section according to the Head Chef's standards, managing junior staff, and maintaining their station.
Key Responsibilities:

  • Station Management: Oversee a specific section of the kitchen, preparing all dishes from that station to the highest standard.
  • Food Preparation: Prepare ingredients, cook dishes, and plate food according to established recipes and presentation guidelines.
  • Quality Control: Ensure every dish that leaves the station meets quality, taste, and visual standards.
  • Supervision: Guide and supervise Commis Chefs and other junior staff within the section.
  • Inventory & Ordering: Monitor stock levels for their section and inform the Sous Chef of any shortages.
  • Hygiene & Safety: Maintain impeccable cleanliness and organization of their station, adhering to all food safety protocols.
Qualifications & Skills:
  • Culinary school diploma or equivalent on-the-job training.
  • Several years of experience in a professional kitchen environment.
  • Expert knowledge of cooking techniques and procedures for their specific station.
  • Leadership skills and ability to work well under pressure.
  • Strong understanding of health and safety standards.
