About the Job

An opportunity has arisen for a Chef De Cuisine in Jumeirah Restaurants. The main duties and responsibilities of this role:

Operational

Manage all sections of the kitchen and bring them up to brand standard.

Work in close liaison with all sections of the kitchen to ensure efficient service, and provide solutions to any problems that may arise.

Supervise the pass and ensures every dish sent from the kitchen is up to brand standards.

Build a strong relationship with central purchasing and communicate on any food quality issues, new or seasonal products needed.

Manage product quality and to assist in sourcing new products and suppliers to improve efficiency.

Assist the Brand Chef with new menu development and to actively create new dishes.

Monitor and accounts for food wastage within the active inventory system.

Ensure the upkeep and condition of all kitchen equipment.

Co-ordinate kitchen cleaning and stewarding schedules and administrative work.

Actively involved with ways to maintain and increase business levels, while seeking to understand local competition.

Coordinate on a daily basis with Outlet Manager regarding outlet issues, operations and performance.

Health & Safety

Ensure the daily kitchen records and labelling standards are being maintained at all times.

Ensure stock rotation is handled correctly and FIFO is being practiced. Any area found not to be to company standard must be addressed immediately.

Monitor the health and safety practices within the outlet addressing any issues immediately. Ensure any issues are reported to a senior once actioned.

HR/Training

Co-ordinates menu development with FOH training sessions including developing materials and conducting training and tastings.

Manages the staff training structure and maintains an active training plan/programme for each colleague.

Actively involved in creating standard recipes, descriptions.

Manages kitchen schedules and the vacation planner. Writes weekly operational rota making sure to manage days off and lieu days adhering to company policies and procedures.

Is able to flex manning levels around business requirements. Assists the OM in conducting timely performance reviews for the kitchen brigade.

Communication

Coordinate on a daily basis with Outlet Manager/Restaurant General Managers regarding outlet issues, operations and performance.

Attend group operational meetings.

About you:

The ideal candidate for this position will have the following experience and qualifications:

Culinary Degree

3 years as Chef De Cuisine in a standalone restaurant

Ability to read, write and understand English, be HACCP compliant, carry weights over 15kg, be approachable in a calm way
