Chef de Cuisine
An exciting opportunity has arisen for a Chef de Cuisine to join Rixos Premium Saadiyat Island.

Quality standards:

Ensure consistency and highest quality in food taste, temperature and presentation

Ensure the quality and cleanliness of all food displays with maximum creativity

Operations:

\xc2\xb7 Coordinate all Restaurant / Banquet / food production, and all specific duties to chefs and other staff under his/her supervision.

\xc2\xb7 Check all set-ups for restaurant and banquet functions. Responsible for the correct timing during service and that food served is always of the highest standards.

\xc2\xb7 Monitor and implement portion control established with the recipe cards and the butcher test; minimise waste and spoilage.

\xc2\xb7 Check stores and refrigerators and oversee proper storage and recycling of leftovers.

\xc2\xb7 Ensure effective communication among the kitchens and with other departments.

\xc2\xb7 Work closely with receiving and storeroom to ensure received goods meet Hotel\xe2\x80\x99s quality standards specifications.

\xc2\xb7 Supervise food tasting sessions and guide chefs for new menu implementation.

\xc2\xb7 Attend meetings with Executive Chef to discuss future business strategy and review ongoing action plan progress, and other departmental meetings as required.

\xc2\xb7 Update menu recipe cards and menu planning for promotions.

Training/ development:

\xc2\xb7 Conduct staff training and on-the-job training on kitchen skills and new menu items.

\xc2\xb7 Guide employee orientation for new hires.

\xc2\xb7 Ensure staff adhere to hotel regulations re: fire, safety and emergency procedures.

\xc2\xb7 Cost Control.

\xc2\xb7 Maintain proper controls over purchase orders and requisitions.

\xc2\xb7 Monitor monthly food inventory turnover and slow moving items.

\xc2\xb7 Ensure purchasing, receiving and all storage are efficiently handled.

\xc2\xb7 Review food cost analysis on a daily basis to in line with budget and forecast.

Hygiene and sanitation:

\xc2\xb7 Follow HACCP guidelines and ensure that staff comply with HACCP guidelines.

\xc2\xb7 Works closely with Chief Steward to monitor and ensure that all cleaning is properly conducted and according to schedule.

Staffing / human relations:

\xc2\xb7 Recommend promotions, transfers of staff to various outlets for Executive Chef approval.

\xc2\xb7 Monitor staff schedules for the assigned outlets.

\xc2\xb7 Conduct section / departmental meetings and staff daily briefings

\xc2\xb7 Manage staff appraisal process.

\xc2\xb7 Responsible for proper efficiency and profitable functioning of the assigned F&B outlets.

Others:

\xc2\xb7 Assign specific duties to all employees, instruct them in their work and communicate with Executive Chef on all aspects of the kitchen management.

\xc2\xb7 Communicate with the Executive Chef on guest-related activities and comments, solving any problems directly, efficiently and effectively to the best of his/her judgment.

\xc2\xb7 Attend all meetings which fall under his/her jurisdiction, follow directives given and advises Executive Chef on topics of importance.

\xc2\xb7 Recommend to Executive Chef changes in kitchen equipment and organizational structure and relays any recommendations from the rest of the kitchen brigade.

\xc2\xb7 Keep ahead of trade practices in the food service industry through trade magazines, competitive surveys and other aids.

\xc2\xb7 Prevent the usage of spoiled or contaminated products in any phase of food preparation and prevent unwell employees from taking part in the preparation or handling of food.

\xc2\xb7 Build guest loyalty and develop professional relationships with regular guests.

\xc2\xb7 Continually improve product and obtain feedback from guest and patrons.

Personal attributes:

\xc2\xb7 Oral and written fluency in English.

\xc2\xb7 Knowledge of other languages.

\xc2\xb7 Must have strong culinary experience (international preferred).

\xc2\xb7 Excellent leadership & supervisory skills with a \xe2\x80\x9chands-on\xe2\x80\x9d approach.

\xc2\xb7 Positive attitude and high energy level.

\xc2\xb7 Motivator & self starter; displays initiative & creativity.

\xc2\xb7 Team player and team builder.

\xc2\xb7 Flexible & adaptable to different working locations.

\xc2\xb7 Finance knowledge.

Qualifications:

\xc2\xb7 In-depth culinary knowledge.

\xc2\xb7 Completed an internationally recognized apprenticeship, culinary school or certified training program.

\xc2\xb7 Apprenticeship or any other culinary certificate/diploma an advantage.

\xc2\xb7 Experience in High end Restaurants.

\xc2\xb7 Passion for seasonality and local produce.

Experience:

\xc2\xb7 Minimum 12 year experience in culinary field with at least 5 years\xe2\x80\x99 experience in an International Class Hotel or high volume operations of a 5-star calibre.
