The ideal candidate will have expertise in preparing a wide variety of traditional Indian chaat items (like pani puri, bhel puri, papdi chaat, samosa, kachoris) and classic Indian sweets (mithai) such as gulab jamun, rasgulla, barfi, laddoo, jalebi, and more. The chef should be able to maintain authentic taste, high hygiene standards, and efficient kitchen operations.
Chaat Preparation:
Prepare a range of North Indian and regional chaats with consistency and authenticity.
Maintain proper hygiene and cleanliness in the preparation and serving of street food.
Create new fusion or seasonal chaat recipes based on customer preferences and trends.
Halwai/Sweets Preparation:
Prepare traditional Indian sweets using proper techniques (boiling, frying, sugar syrup preparation, etc.).
Manage the preparation of milk-based sweets (khoya, peda, rasmalai, etc.) and dry sweets.
Handle bulk sweet preparation for events, catering, and festivals.
Kitchen Operations:
Maintain cleanliness and hygiene in the cooking area as per food safety standards.
Monitor ingredient inventory, prepare purchase lists, and manage stock rotation.
Train junior staff or helpers if required.
Quality Control:
Ensure consistent taste, presentation, and portioning of dishes.
Follow traditional recipes while maintaining modern hygiene and efficiency standards.
Monitor cooking times and techniques for optimal flavor and texture.
Required Skills & Qualifications:
Proven experience as a Halwai or Chaat chef in a professional setup.
Strong knowledge of Indian sweets and snacks across different regions.
Ability to work under pressure in a fast-paced kitchen environment.
Good understanding of food safety, cleanliness, and hygiene.
Creativity in presentation and flavor innovation is a plus.
Ability to handle bulk orders and festival/event-based production.
