CDP - Pastry
(Chef de Partie - Pastry / Station Chef)
Position Overview:
The CDP is a senior role with full responsibility for a specific section of the pastry kitchen (e.g., "the dessert station," "the chocolate section," "the bakery"). They are experts in their domain, responsible for the quality, consistency, and output of their section. They manage the DCDP and Commis chefs assigned to them.
Key Responsibilities:

  • Full Section Leadership:
  • Take complete ownership of a pastry section from preparation to service.
  • Develop and cost recipes for the section in collaboration with the Pastry Sous Chef or Executive Pastry Chef.
  • Manage food costs and minimize waste within the section.
  • Place orders for the section's ingredients and supplies, ensuring accurate par levels.
  • Production & Innovation:
  • Execute all items on the menu to the exact standard set by the Pastry Chef.
  • Ensure every dish that leaves the section is perfect in taste, texture, and presentation.
  • Contribute ideas for new menu items, specials, and improvements.
  • Team Management & Training:
  • Directly supervise, train, and mentor the DCDP and Commis chefs on their team.
  • Create prep lists and delegate tasks efficiently to ensure a smooth service.
  • Conduct performance evaluations for junior staff in their section.
  • Administration & Communication:
  • Maintain detailed records of production, waste, and menu changes.
  • Act as a key communication link between senior management (Sous Chef/Head Chef) and the junior staff on the line.
Reporting Line: Reports directly to the Pastry Sous Chef or Executive Pastry Chef.
Required Skills & Qualifications:
  • Minimum of 3-4 years of progressive experience in high-volume or fine-dining pastry kitchens.
  • Expert-level knowledge and technical skill in their specific section's specialty.
  • Proven leadership abilities and experience in managing a small team.
  • Strong organizational, time-management, and problem-solving skills.
  • Excellent understanding of food costing, inventory management, and kitchen administration.
  • Creativity and a passion for developing new and exciting pastry offerings.
