Skills Required: As a F&B Captain, you will be responsible for overseeing the set-up and clean-up of food and beverage during banquet functions in the hotel's continuing effort to deliver outstanding guest service and financial profitability. Duties & Responsibilities: Maintain an efficient workflow by adhering to the Sequence of Service and all timeframes and standards detailed in relevant SOPs in the F&B Standards Manual. Visually inspects and takes corrective action to ensure that facilities in restaurant look appealing and attractive to guests. Responsible for ensuring that all equipment is in working order. Responsible for ensuring that food quality is consistent, appealing, and prepared to guest specifications. Moves throughout facility and kitchen areas to visually monitor and take corrective action to ensure food quality and service standards are met. Trains, supervises, counsels, and participates in the evaluation of Restaurant staff employees for the efficient operation in the Restaurant and directs staff in their work assignments. Interacts with guests to obtain feedback on quality of service and food in outlet. Investigates and ability to resolve guest problems through to resolution stage. Documents inventory forecast usage and monitors supply so that the Restaurant is stocked with linen, glassware, silverware, china, condiments and other items necessary to provide appropriate customer service. Oversees set up of dining and service areas and proactively ensure both front and back of house areas are maintained clean & clear. Responsible for ensuring compliance with all policies and procedures that relate to the restaurant as well as all local, state and federal laws and regulations. Ensure that meals are being served in a professional and timely manner by circulating within the outlet and communicating with the kitchen and the order takers. Attend pre-meal meetings and conduct ongoing training of employees to ensure that employees continue to improve their performance. Active promotion of in-house sales by optimal knowledge of all the services of the hotel and the opening times and promotions of all Food & Beverage outlets. Comply with all relevant legislation governing hygiene, fire, health & safety at work and adhere to rules, regulations & policies of the hotel. Respond to any guest requests or needs, personally where possible and proactively offer help to guests in need of assistance. Use the POS -Micros / Opera system effectively and knowing the relevant procedures with regards to shift closing, Opera postings and other billing and cash drop procedures. Ability to lead the team, take the initiative and maintain required service standards in the absence of the F&B Supervisor and Manager. Exemplify good knowledge of allergens and be able to give definitive allergy advice to guests in a professional manner. Exemplify good knowledge of mocktails, freshly brewed coffees and non-alcoholic drinks that are both hot and cold. Up-sell and Cross-Sell effectively to enhance the customer experience and departmental targets. Ability to develop new hires within the department with a thorough shadowing process. Attend trainings & meetings within working hours as required. Attend work on a flexible weekly roster which meets business requirements.
