The Butcher is responsible for preparing, cutting, trimming, and packaging meat and poultry products according to customer specifications and company standards. The role involves maintaining high standards of cleanliness, safety, and hygiene while ensuring quality customer service.
Key Responsibilities:
Cut, trim, bone, tie, and grind meats such as beef, pork, poultry, and lamb.
Prepare meat cuts to customer specifications or standard cuts for display.
Ensure the proper storage and rotation of products to minimize waste.
Maintain cleanliness and sanitation of the work area, tools, and equipment.
Monitor meat quality and report any issues to management.
Provide recommendations and advice to customers on meat selection and cooking methods.
Operate meat processing equipment such as slicers, grinders, and saws safely.
Package and label products accurately with pricing and expiry information.
Follow all food safety and hygiene regulations as per company and local health authorities.
Assist with inventory counts and stock management.
Qualifications and Skills:
Proven experience as a butcher or meat cutter.
Knowledge of meat preparation techniques and food safety practices.
Ability to work in a cold environment and stand for extended periods.
Good hand-eye coordination and knife handling skills.
Strong attention to detail and customer service orientation.
Physical stamina and the ability to lift heavy items.
Preferred:
Formal training or certification in meat cutting or food safety (e.g., HACCP).
Experience in restaurant butchery.
