Reports directly to the Executive Chef. CDP Baker is primarily responsible for preparing different types of bread, including artisan and heritage techniques, as well as a wide range of pastries, like cookies, cakes, and pies. CDP - Baker is well informed about the current trends in bread making and alternatives to flour, dairy, and sugar. Must be a leader in the field and able to work independently while keeping the operation running smoothly. Is responsible for all phases of the bakery production process involving quality control, cost control, team management, and development of bakery personnel. Understands the subtlety of using raw, unrefined, and unprocessed organic ingredients significantly. Feeds the fermentation process of starters and directs a presentation of the design centerpiece elements such as dough carving, carving, and sugar extraction. Provides and communicates transparent feedback that will represent the vision, values, and full offering of the Bridge Lifestyle Centre. This intends to highlight the most critical areas of responsibility only and does not cover all aspects of the position.
| KEY RESPONSIBILITIES | OPERATIONAL EXCELLENCE
  • Coordinates and directs the bakery preparation, from ordering, preparation through service, and feedback.
  • Monitors the quality of the bakery items. Has an eye for detail and oversees a multiple-level operation.
  • Tracks, records, and maintains inventory stock of bakery items.
  • Leads in catering and future conferences to create revenue and build reputation or more events.
| ADMINISTRATION
  • Maintains and updates recipes technical sheets such as Baker Master sheet as well as bakery recipe folder.
  • Gathers and updates the training tracker of the Bakery department of the BOH Team.
  • Supports F&B Manager in maintaining up-to-date allergy charts concerning the pastry and bakery section.
  • Checks and monitors the execution of Food and safety forms for the bakery section.
  • Supports and participates in audits being carried out by Abu Dhabi Municipality and Health Authority.
  • Assists in developing long-term and short-term financial revenue for bakery departments.
  • Delegates to the team and ensures seamless operation during his /her absence.
| INTERNAL & EXTERNAL CUSTOMER SERVICE
  • Supports and promotes initiatives carried by the Marketing | PR team and suggests its own ideas.
  • Ascertains a high degree of anticipation and maintains a Net Promoter Score.
  • Engages with guests, members, Taste team supports their enquires and concerns.
  • Is welcoming and accommodating when discussing any requests.
  • Is familiar with all activities of The Bridge and can explain as well as demonstrate the TB App to customers.
  • Performs any reasonable task required that might be outside the job scope in the spirit of collaboration.
| SUSTAINED LEARNING & DEVELOPMENT
  • Participates in TB training sessions and communication briefings on a monthly, weekly, and /or daily basis.
  • Assists Executive Chef in hiring.
  • Supports employees during the onboarding period and induction sessions.
  • Encourages direct feedback and conducts performance reviews of the Bakery sections Team.
  • Suggests changes and improvements to Taste Experience Procedures and recipes across the menu.
  • Maximizes opportunities for self-development to upgrade his/her knowledge and skills by actively participating in TB internal and external initiatives and App.
  • Researches new advances in gastronomy, wellbeing improvement, and hospitality trends. Shares done researches with EC.
| HYGIENE & SAFETY
  • Maintains a high level of personal hygiene, seeks feedback on areas of a shortfall and complies with the Grooming procedures.
  • Supports other Taste Team to comply with the Grooming Experience Procedures and reports to EC needed improvements.
  • Complies with all Health & Safety regulations while performing daily duties at all times.
  • Takes responsibility for reporting any hazard and follows up to ensure the execution of required actions.
| POSITION REQUIREMENTS | EDUCATION & EXPERIENCE Courses in the following integrated modalities will add value to the preferred candidate. Please send any additional qualifications, interests, and experiences that contribute to your holistic lifestyle.
  • A minimum of 5 years of experience in a similar role. Certification from a culinary school is an advantage.
  • Familiarity with all professional kitchen equipment, including mixers, blenders, and dough sheeter.
  • Knowledge of alternatives to white flour and refined sugar. Follows trends in pastry.
  • Leads, organizes, and trains the team to a sufficient level.
  • Must be able to plan large-scale operations.
  • Ability to create, execute, and cost a recipe. Understands the financial aspects of F&B operation and can plan operations within a set budget.
  • Must be able to relate to all levels of management.
  • Resourceful, forward-thinking, innovative, and committed.
  • Experienced in being an integral point of contact for esteemed Bridge customers.
  • Must be willing to add value to enhance health, safety, and productivity as well as maintain TB to thrive on being a smoke-free workplace.
