Stewarding Supervisor leads and coordinates all activities and provides assistance to the staff of the stewarding section of F&B Department, to ensure all established service standards and procedures of the hotel and restaurants are implemented consistently, leading to guest & staff satisfaction. Main Duties:
  • Responsible for supervising the stewarding operation during shift and for cleaning and maintaining food and beverage premises to high hygienic standards.
  • Supervise dishwashers on assigned shift and ensure dishes, pots, pans, flatware and other kitchen items and utensils are cleaned in an appropriate and timely manner.
  • Ensure all dishwashing machinery is operated in accordance with manufacturers operating instructions and properly cleaned at the end of the day/shift and is serviced periodically. Ensure that operating dishwasher temperatures for wash, rinse and exit are maintained as per standards and recorded.
  • Demonstrated knowledge of kitchen sanitation standards.
  • Does monthly stock-takes of the stewarding equipment, store par, with reference to checklists issued by the stewarding department and cost control respectively.
  • Keeping track of service’s operating cutleries and crockery to ensure par level for smooth operations.
  • Maintain all operating equipment and raise engineering work order and co-ordinate damaged items for repair.
  • Maintains performance of contracts such as Garbage Disposal, Chemical Suppliers, Exterminator, Night Cleaning Contracts if applicable, and arranges special cleaning schedules when applicable.
  • Manage and schedules weekly kitchen cleaning of very high standard.
  • Uphold Kitchen cleanliness and hygiene of kitchen and follow HACCP program as lead by HACCP Officer, including physical cleaning of areas as required.
  • Assist inventory clerk on the organization, maintenance of the general storeroom’s operating and cleaning supply stocks.
  • Provide sufficient quality equipment (china, glasses, silver) to the outlets, kitchen, and banquets for their operations.
  • Perform walkthrough with Food & Beverage Manager and Head Chef on a regular basis.
  • Ensure all storage room are kept clean and organized.
  • Communicates and cooperates with all management and line staff employees.
  • Checks the daily function sheet and makes sure that the chafing dish and other kitchen equipment being prepared.
  • Ensures that the minimum level of labor is used to perform the required level of service without impacting service standards.
  • Organize work assignments, make recommendations with regards to training, performance evaluations, and discipline for stewards.
  • Assist with the team member for inventory of Small Operating Equipment / Furniture, Fixtures & Equipment.
  • Checks breakage in all outlets and prepares daily and monthly reports.
  • Ensures decoy system is used when clearance is done.
  • Maintains a daily logbook of all daily reports and complaints.
  • Ensures hygiene and cleanliness all around the kitchen, food production and food storage areas during active walks per shift.
  • Ensures that all reporting colleagues always maintain a high standard of personal hygiene and grooming.
  • Ensures that silverware, glassware, chinaware, pots, and pans are properly washed, cleaned, dried and stored according to established standards.
  • Clean ovens, hoods, filters, drains, according to schedule or as specified by the Head Chef or Chef of their respective area of responsibility.
  • Train and supervise the Stewarding team in following policies and procedures.
  • Conducts daily meetings with the stewarding outsource and provides hotel information and any event requirements.
  • Perform any other reasonable duties as required by the Food & Beverage Manager or Head Chef from time to time.
  • To take all reasonable measures not to handle food or food contact surfaces in a way that is likely to compromise the safety and suitability of the food.
  • Is aware of and follow general rules in food safety and food hygiene.
  • Carries out any other reasonable and lawful request directed by the Management.
  • Represents the Company in a positive and professional manner.
  • Adheres to the Company’s Rules, Regulations, Procedures and Policies at all times
Health & Safety: To take reasonable care for the health and safety of himself and of other persons who may be affected through your work activities.
  • Ensures a healthy, safe working environment. Maintain high standards of personal hygiene of staff (hairs, hands, shoes, uniform etc.)
  • Maintains and always ensures confidentiality.
  • Ensure compliance with local legislations and statutory Health Safety & Security codes of practice.
  • Observe COSHH guidelines when handling hazardous substances and comply with all aspects of Health, Safety & Security requirements.
  • Conduct routine inspection of the area and ensure that all work area plant and equipment are safe to operate.
  • Ensure that staff wear the mandatory personal protective equipment and are adequately trained to carry out safe work practices and are fully aware of emergency and evacuation procedures.
Are You a Star?
In order to be qualified for this role you should possess the below criteria:
  • Minimum High school or Equivalent
  • Intermediate knowledge of Microsoft Word and Excel programs
  • A minimum 2 years’ experience as Supervisor Steward or 4 years of experience as Steward in a high end five- or four-star hotel
  • HACCP and EFST Knowledge
  • Strong interpersonal, problem solving abilities and communication skills required
  • In Depth Knowledge of Stewarding Operating procedures
  • Knowledgeable of chemical and sanitation guidelines
  • The ideal candidate will be a friendly, respectful individual with good cross cultures sensitivity and a concern for quality and an eye for details
  • Will work well under pressure in a fast-paced environment and enjoy working with a multi-cultural team
  • Fit and Healthy
  • Fluent in English [writing and reading]
Desirable:
  • To attain the Food Safety and Food Hygiene specified by the standards/legislation.
