to oversee the stewarding team and ensure the cleanliness, organization, and maintenance of all kitchen and back-of-house areas. This role is vital for maintaining hygiene standards and supporting smooth kitchen operations in accordance with health, safety, and sanitation regulations.
Responsibilities:
Supervise and coordinate activities of stewarding staff (dishwashers, cleaners, porters, etc.).
Ensure the cleanliness and sanitation of all kitchen areas, equipment, and utensils.
Monitor inventory levels of cleaning supplies and stewarding equipment; assist in requisitioning supplies as needed.
Conduct regular inspections to ensure proper cleaning procedures are followed and equipment is maintained.
Train, schedule, and support stewarding team members in proper cleaning and safety techniques.
Ensure compliance with food safety and hygiene standards (e.g., HACCP, local health regulations).
Coordinate with the culinary and service teams to support operational needs during busy service periods and events.
Manage waste disposal and recycling processes in accordance with property and environmental policies.
Maintain proper storage and organization of kitchen equipment and cleaning materials.
Report any maintenance or safety issues to the appropriate department.
Assist in performance reviews and discipline of stewarding staff, as required.
