Role Summary

The role ensures hygiene, cleanliness, and sanitation across all food preparation areas, while managing stewarding staff, inventory, and compliance with safety standards.

What You'll Do

• Supervise day-to-day operations of the stewarding department, including scheduling, performance management, and staff training.
• Develop and implement departmental policies to meet cleanliness, hygiene, and safety standards.
• Conduct regular inspections of kitchens, dishwashing areas, and storage facilities to maintain sanitation and regulatory compliance.
• Monitor inventory of cleaning supplies, chemicals, and utensils, coordinating replenishments with procurement.
• Ensure dishwashing machines and cleaning equipment are maintained and serviced on time.
• Collaborate with culinary and banquet teams to ensure smooth operations and efficient workflow.
• Train stewards on safe cleaning practices, PPE usage, and emergency procedures.
• Investigate and report accidents, incidents, or health violations, implementing corrective actions.
• Maintain accurate documentation of sanitation practices, schedules, and training records.

Ideal Profile

• Strong knowledge of food safety standards (HACCP) and sanitation practices.
• Culinary operations understanding, including equipment handling and kitchen workflows.
• Experience in menu support, food handling, and basic culinary expertise is an advantage.
• Skilled in inventory and cost control, reducing wastage, and maintaining stock efficiency.
• Excellent leadership, problem-solving, and decision-making skills.
• Ability to work long hours in a fast-paced hospitality environment.
• Professional, reliable, and committed to service excellence.
• Strong communication and collaboration skills across departments.
