Wash, sanitize, and rack plates, cutlery, glassware, pans, and small equipment using commercial machines and manual methods; polish glassware/cutlery as needed and return to stations.
BOH Cleaning:
Clean and sanitize worktops, sinks, floors, walls, hoods, and drains; follow daily/weekly cleaning checklists and deep-clean schedules.
Service Readiness:
Refill side stations with plates, cutlery, napkins, and service ware; set up hot boxes/racks; support pass/expedite teams during peak periods.
Waste & Recycling:
Segregate waste (organic, recyclable, oil/grease); safely handle bins, compactors, and grease traps per SOP; keep back dock tidy.
Inventory Support:
Maintain par levels of stewarding supplies (detergents, gloves, liners, scouring pads); receive and store deliveries (dry, chiller, freezer) with proper rotation (FIFO).
Equipment Care:
Operate dish/ glass washers and pressure washers correctly; perform basic filter cleaning and report faults immediately.
Food Safety & HACCP:
Follow color-coding, temperature controls, and cross-contamination prevention; complete cleaning logs accurately.
Guest-Impact Tasks (as needed):
Assist FOH with bussing tables, replacing soiled tableware, and quick spill response to uphold dining-room cleanliness.
Safety & PPE:
Use PPE; handle chemicals per MSDS; practice safe lifting and slip/fall prevention.
Other Duties:
Any reasonable tasks assigned to support service.
