Position Overview
Atlantis The Palm is seeking a talented and motivated Sous Chef to join the culinary team at Hakkasan, one of the resort's award-winning dining venues. The successful candidate will support the Chef de Cuisine in leading kitchen operations, ensuring the preparation of exceptional dishes in line with the brand's world-class standards. Key Responsibilities

  • Supervise and coordinate all kitchen activities to ensure smooth daily operations.
  • Support the Chef de Cuisine in planning menus, recipes, and production schedules.
  • Lead, motivate, and train junior kitchen staff to maintain a culture of excellence.
  • Maintain proper hygiene, sanitation, and food safety standards in all kitchen areas.
  • Monitor inventory levels, food costs, and waste control to optimize efficiency.
  • Conduct regular quality checks to ensure consistency in taste, presentation, and portioning.
  • Collaborate with the restaurant management and service teams to deliver seamless guest experiences.
  • Oversee kitchen maintenance and ensure equipment is in optimal working condition.
  • Manage staff scheduling, discipline, and performance appraisals as required.
  • Contribute to new menu development and continuous culinary innovation.
Ideal Profile
  • Diploma or degree in Culinary Arts or Catering.
  • Minimum 5 years of experience in a 5-star international hotel or fine-dining restaurant.
  • At least 1-2 years in a Sous Chef or similar leadership position.
  • Expertise in Asian and contemporary cuisine preferred.
  • Strong understanding of HACCP, kitchen management, and operational controls.
  • Proven ability to manage diverse teams and work under pressure.
  • Excellent communication, leadership, and organizational skills.
