We are looking for a highly skilled *Sous Chef with strong expertise in Turkish, Arabic, and Iranian kebab styles to support our culinary team in delivering a modern, creative grill experience. The Sous Chef will assist in leading the kitchen, maintaining consistency in traditional kebab techniques, and elevating dishes through contemporary presentation aligned with our brand.
Key Responsibilities
Culinary Excellence (Turkish, Arabic & Iranian Kebab Mastery)
Prepare and execute kebabs using authentic regional techniques:
Turkish:Adana, Urfa, ?i? Kebap, Doner, Beyti, Ali Nazik
Arabic:Kofta, Shish Tawouk, Mashawi, Lamb Chops, Mixed Grills
Iranian:Koobideh, Joojeh, Barg, Soltani, Kebab Torsh
Oversee charcoal, mangal, or vertical rotisserie grills with expert heat control.
Ensure marinades, seasoning blends, skewering styles, and cooking methods follow authentic traditions while meeting modern standards.
Maintain consistent quality, flavor, and texture in all grill items.
Kitchen Leadership
Assist the Head Chef with daily kitchen operations, line supervision, and service coordination.
Lead grill cooks and prep staff to ensure high efficiency and smooth service.
Maintain discipline, teamwork, and strong communication within the kitchen.
Menu Development
Contribute to new dishes inspired by classic Middle Eastern, Turkish, and Persian kebab traditions.
Help modernize presentation styles while preserving authentic flavor profiles.
Innovate with sauces, dips, meze, breads, and sides that complement kebabs.
Quality Control & Standards
Conduct regular quality checks on meats, spices, produce, and marinades.
Ensure all dishes meet brand standards for taste, temperature, and appearance.
Maintain highest food safety and hygiene standards (HACCP compliance).
Operational Duties
Assist with ordering, inventory, supplier communication, and meat sourcing.
Train junior chefs in cutting techniques, marination, skewering, cooking, and plating.
Control portion sizes and minimize waste.
Qualifications & Experience
5+ years professional kitchen experience including grilling or kebab-focused roles.
Proven expertise in Turkish, Arabic, and/or Iranian kebab traditions.
Minimum 2 years in a senior role (Sous Chef, Senior Grill Chef, or similar).
Strong command of charcoal grilling, skewer fabrication, meat handling, and marinades.
Experience in high-volume kitchens or modern Middle Eastern restaurants preferred.
Strong leadership, communication, and training abilities.
Passionate, creative, and able to thrive in a fast-paced environment.
