The ideal candidate will combine strong
culinary leadership
with exceptional organizational skills to ensure seamless service, inventory control, and impeccable standards across the morning shift.
Oversee all cold and hot station preparations for the breakfast buffet, ensuring timely setup and continuous replenishment for all offerings (e.g., eggs, meats, pastries, fruits, house-made items).
Quality & Consistency:
Maintain the highest standards of food quality, freshness, and presentation across all buffet items, reflecting a premium dining experience.
Inventory & Waste Control:
Accurately forecast ingredient needs for the breakfast period and implement strict controls to minimize food waste and manage rotation.
2. Prep Kitchen Operations
Prep Scheduling:
Efficiently organize and execute daily mise en place for the main kitchen, delegating tasks and managing prep lists for all necessary bases, stocks, sauces, and components needed for later services.
Hygiene & Safety:
Ensure the entire prep kitchen area and all products adhere to stringent
HACCP and local health and safety regulations

Recipe Execution:
Follow and enforce precise execution of all standardized recipes to guarantee flavor consistency across all dishes.
What We're Looking For
Proven Experience:
Minimum 2+ years of experience as a Sous Chef, Chef de Partie, or senior cook, with demonstrable experience in
hotel breakfast service
or large-scale catering/buffet production.
Organizational Mastery:
Exceptional ability to organize staff, manage large volumes of production simultaneously, and maintain strict kitchen schedules.
Leadership:
A calm, authoritative, and motivating presence capable of leading the morning shift and holding staff accountable to high standards.
Compliance Knowledge:
Deep, working knowledge of food safety, sanitation protocols, and temperature control (hot and cold holding).
