To assist Executive Chef/Director of Culinary in overall management and control of the Kitchen, to ensure that the food department\xe2\x80\x99s revenue and profit targets are met.
To adhere to company hygiene and safety Policies and maintain general cleanliness of the Kitchen.
To develop the skills of the brigade and help develop people. Maintain high standard of food quality at all time.

Monitor and maintain consistent food standards and quality across all areas and during all stages of production and supply to ensure the HACCP procedure according to the company food safety management documents is maintained and the correct use of the forms cleaning Rota and closing down procedures. This will ensure quality control measures and hygiene systems are achieved at all times.
Control departmental expenses including food costs and wages, in line with business levels.
Implement & monitor all Health & Safety and hygiene practices and procedures.
Implement and monitor departmental training & development plans via appraisal process to motivate, coach & team build.
Good understanding of all applicable Health & Safety legislation & experience working with strict Health & Hygiene regimes
Full understanding of food controls & experience of ordering & menu pricing
Self-motivated \xe2\x80\x93 and able to motivate others to achieve
Proven man-management, coaching and team building skills
To have total accountability for the day to day running operation in the kitchen and making sure high standard of quality maintain.
Experience of large volume functions and weddings

Qualifications
  • Minimum 2 Years\xe2\x80\x99 experience in kitchen as Sous Chef or equivalent.
  • Must have certificate course in Food Production
  • Must have HACCP Awareness certificate.
  • Basic Computer Skills.
