Job Description

The Sommelier is a key contributor to the fine dining experience, tasked with the meticulous curation and management of the restaurant\'s wine program. This multifaceted role involves not only recommending and serving wines but also seamless collaboration with the culinary team to craft exquisite pairings. The Sommelier plays a pivotal role in enhancing the overall ambiance, offering guests an immersive journey through the world of wines with unparalleled expertise and personalized service. Source and curate an extensive and diverse wine collection, ensuring a balanced representation of regions, varietals, and vintages. Regularly assess the quality and market demand of existing wines, making strategic decisions on additions, removals, and updates to the wine list. Implement and maintain a meticulous inventory management system, conducting regular spot checks to monitor stock levels, prevent discrepancies, and uphold optimal storage conditions. Collaborate with suppliers to negotiate favorable terms, secure timely deliveries, and explore exclusive offerings. Develop a deep understanding of guests\' preferences and guide them through the wine selection process with tailored recommendations. Stay informed about guest feedback on wine choices, adjusting recommendations and the wine list accordingly. Work closely with the culinary team to create detailed food and wine pairing suggestions that complement the flavors of each dish on the menu. Conduct periodic tastings with the kitchen staff to enhance collaboration and maintain updated pairings. Proactively engage with guests at their tables, offering insights into the stories behind each wine, fostering a connection between the guest and the dining experience. Host exclusive wine-focused events, providing guests with unique opportunities to explore new wines and enhance their wine knowledge. Develop and conduct comprehensive training programs for serving staff, covering wine service etiquette, glassware presentation, and effective communication with guests. Ensure that the entire team is well-versed in the wine list, confidently conveying information to guests. Plan and execute regular wine tasting events, educational seminars, and exclusive wine dinners to engage customers and create a dynamic wine culture within the restaurant. Collaborate with marketing to promote events and attract a diverse audience. Advise on the visual presentation of the wine collection, recommending attractive displays and creating visually appealing wine lists. Collaborate with interior design teams for wine cellar or display enhancements, contributing to the overall ambiance. Attend industry conferences, tastings, and workshops to stay updated on global wine trends, emerging vineyards, and innovative practices. Share acquired knowledge with staff, fostering a culture of continuous learning within the team. Implement and monitor bar control measures to maintain accurate pour levels, prevent wastage, and optimize beverage costs. Regularly review and update beverage menus, incorporating seasonal selections and aligning with overall restaurant themes. Establish and maintain a system for gathering customer feedback on wine selections, actively using this information to refine the wine program and enhance customer satisfaction. Develop and administer regular training programs covering a range of topics, including wine regions, varietals, proper service techniques, and the art of suggestive selling. Collaborate with management to strategize pricing, promotions, and marketing initiatives, ensuring alignment with business goals and customer preferences. Implement stringent quality control measures, including regular taste tests, to ensure that all wines meet the restaurant\'s standards for taste, aroma, and presentation. Conduct thorough market analysis to identify emerging trends, competitor offerings, and customer preferences, providing valuable insights for strategic decision-making. Cultivate and nurture strong relationships with wine suppliers, exploring opportunities for exclusive partnerships, negotiating favorable terms, and staying informed about industry developments. Establish and enforce strict bar control measures to prevent theft, control costs, and maintain profitability in the beverage program. Develop specialized training sessions for staff, covering advanced topics such as rare wines, wine and food pairings, and customer engagement strategies. Work closely with the kitchen team to seamlessly integrate wine selections into the overall menu, ensuring a cohesive and complementary dining experience. Devise and execute comprehensive customer education programs, encouraging guests to explore new wines, understand tasting profiles, and appreciate the art of fine dining.
