We're seeking a passionate and skilled Senior Culinary Assistant (Commis I) to join the culinary team at InterContinental Residences Dubai Business Bay. In this role, you will contribute to delivering exceptional dining experiences that reflect the sophistication and world-class standards of the InterContinental brand. As a key member of the kitchen brigade, you'll support daily operations, uphold impeccable food quality, and bring consistency and creativity to every dish served.
Located in the heart of Dubai's dynamic Business Bay district-moments from the Dubai Mall and the iconic Burj Khalifa-InterContinental Residences stands as a sanctuary of luxury and timeless elegance. With 176 exquisitely designed residences, the property embodies refined hospitality and delivers an elevated lifestyle experience for every guest and resident.
As a Senior Culinary Assistant (Commis I), you play an essential role in supporting the culinary team's success, contributing to menu execution, operational excellence, and the overall gastronomic identity of the property.
Your Day-to-Day
Every day is different, but you'll mostly be: Culinary Operations

• Prepare, cook, and present high-quality dishes according to established recipes, standards, and guidelines.
• Support Chef de Partie and Demi Chef in all sections of the kitchen, ensuring smooth and efficient operations.
• Assist in mise-en-place preparation, ensuring readiness for daily service across outlets and in-residence dining.
• Maintain consistency in food quality, flavour, and presentation in line with IHG Luxury & Lifestyle standards.

Operational Excellence

• Ensure compliance with HACCP, Dubai Municipality regulations, and IHG Food Safety protocols at all times.
• Follow standard operating procedures (SOPs) for food handling, storage, cleaning, and hygiene.
• Contribute to the culinary team's efforts to achieve Forbes standards and deliver exceptional guest experiences.
• Collaborate during menu executions, seasonal promotions, and special culinary events.

Teamwork & Coordination

• Work closely with the culinary brigade to ensure timely and efficient service during peak operations.
• Support the training and development of junior team members through guidance and knowledge sharing.
• Communicate effectively with colleagues to maintain workflow, section readiness, and operational harmony.

Continuous Improvement

• Stay updated on modern techniques, ingredients, and culinary trends.
• Demonstrate a commitment to learning and growing within a luxury culinary environment.
• Maintain high standards of discipline, cleanliness, and professionalism.

What We Need from You Qualifications & Experience

• Diploma or Certificate in Culinary Arts or a related field.
• Minimum 2-3 years of experience in a similar role within luxury hotels, fine dining venues, or upscale residences.
• Previous experience in pre-opening environments is an advantage.
• Exposure to Forbes Standard, Michelin-recognized, or luxury brand standards is preferred.

Skills & Competencies

• Strong understanding of fundamental cooking methods and modern culinary techniques.
• Ability to work efficiently in a fast-paced, multicultural environment.
• Good organizational skills and attention to detail.
• Strong teamwork, communication, and time-management abilities.

Certifications

• HACCP / Food Safety Certification required.
• Additional luxury service or culinary training certifications are a plus.
