to manage and maintain food safety documentation in compliance with
HACCP
standards on 2 farms. The role includes preparing, reviewing, and updating all food safety and hygiene protocols required for daily operations, audits, and regulatory compliance in the UAE.
Key Responsibilities:Food Safety Management Systems (HACCP & Certifications)
Develop, implement, and maintain comprehensive HACCP plans and food safety documentation in line with UAE regulations (Dubai Municipality, FSSC, ISO standards)
Prepare and update all necessary procedures and SOPs to ensure readiness for certifications such as FSSC 22000, ISO 22000, Halal, etc., and coordinate with auditors and consultants
Operational Hygiene, Sanitation & Quality Control
Oversee and enforce all day-to-day health, hygiene, and sanitation practices (SSOPs) across production, storage, and packaging
Managing schedules for cleaning, water testing, equipment calibration, and pest control
Conduct regular GMP inspections, sensory evaluations, shelf-life testing, and monitor storage and transport temperatures to ensure optimal conditions and product quality
Compliance, Audits & Record-Keeping
Act as the primary point of contact during all external inspections and audits from authorities like Dubai Municipality and third-party certifiers
Conduct regular internal audits and readiness checks to ensure ongoing compliance
Maintain accurate and up-to-date records, including temperature logs, sanitation checklists, traceability reports, and other required documentation
Product Integrity: Traceability & Labeling
Develop and verify a complete end-to-end traceability system, organizing batch coding, shelf-life tracking, and origin documentation for all products
Provide technical support for the creation and verification of product labels and compositions to ensure compliance with UAE standards, including maintaining a database of ingredients and allergens and supporting language translations
Incident Management & Corrective Actions
Track, investigate, and analyze all internal incidents, customer complaints, and product returns. Issue, follow up on, and report on Corrective and Preventive Action Plans (CAPAs) to address non-compliance findings and prevent recurrence
Team Enablement & Systems Integration
Provide regular training, inductions, and refresher courses for all staff on HACCP, hygiene, safety, and food handling procedures, maintaining all training records.
Support the digitalization of all quality and safety documentation by assisting in the integration with the company's ERP system, including the setup of label templates, stock control, and quality workflows
Requirements:
Bachelor's degree in Food Technology, Microbiology, Environmental Health, or a related field
HACCP Certification (Level 3 or higher); knowledge of ISO 22000 or FSSC 22000 is a plus
Minimum 2-4 years of experience in a food production or processing environment in the UAE
Familiarity with Dubai Municipality regulations and F&B safety practices
Strong communication and organizational skills
Proficiency in English (Arabic is a plus)
