Restaurant Manager
Location: AYA Rooftop Pool Bar, Mileo, The Palm Jumeirah, Dubai
Reporting To: General Manager

Position Overview
We are seeking a dynamic, hands-on, and experienced Restaurant Manager to lead our front-of-house operations. You will be the face of AYA, responsible for translating our vision into a flawless guest experience. This role requires a natural leader with a passion for hospitality, an eye for detail, and the drive to exceed financial and service targets.
Key Responsibilities
Operational Excellence & Guest Experience:

• Oversee all daily operations of the restaurant, ensuring seamless service from opening to closing.
• Maintain the highest standards of service, quality, and cleanliness.
• Personally interact with guests, proactively handling feedback and resolving any issues to ensure complete satisfaction.
• Cultivate a vibrant and welcoming atmosphere that encourages repeat business.

Team Leadership & Development:

• Lead, mentor, and motivate a diverse team of servers, bartenders, and hosts.
• Conduct regular training sessions on service standards, product knowledge, and upselling techniques.
• Manage staff scheduling, payroll, and performance reviews.
• Foster a positive, collaborative, and high-energy team culture.

Financial Performance & Management:

• Drive revenue and meet or exceed sales targets through effective strategies and exceptional service.
• Manage restaurant budgets, control operational costs (including labor, inventory, and supplies), and maximize profitability.
• Analyze financial reports and KPIs to identify trends and opportunities for growth.
• Implement effective inventory and stock management systems.

Sales, Marketing & Brand Ambassadorship:

• Develop and implement strategies to increase covers, average spend, and repeat clientele.
• Work with the marketing team to promote events, special menus, and unique offerings.
• Build strong relationships with guests, influencers, and repeat clients.
• Uphold and enhance the AYA brand reputation in the market.

Compliance & Safety:

• Ensure full compliance with Dubai Municipality health, safety, and hygiene regulations.
• Maintain a safe and secure environment for both guests and employees.
• Ensure all licensing requirements are adhered to.

Qualifications & Experience

• Minimum of 3-5 years of experience as a Restaurant Manager in a high-volume, premium, or luxury dining environment. Experience in a rooftop bar, beach club, or similar lifestyle venue is a significant advantage.
• Proven track record in financial management, including P&L understanding, cost control, and achieving sales targets.
• Extensive knowledge of food and beverage, including wines, spirits, and mixology.
• Strong leadership and people management skills with the ability to inspire a team.
• Exceptional communication, interpersonal, and problem-solving skills.
• Impeccable personal presentation and a professional demeanor.
• Flexibility to work evenings, weekends, and public holidays.
• Must be currently residing in the UAE and available for an immediate interview.
