to manage our live bakery station and support the Head Chef in daily pastry, cake, and bread production. This role is ideal for a baker or pastry professional looking to grow into a senior pastry position within a modern, live-kitchen bakery concept.
Key ResponsibilitiesLive Station & Bread Production
Operate and manage the
live bakery station
(tandoor / bread oven / flatbread station).
Prepare, bake, and present fresh artisan breads including tandoori bread, manakeesh, buns, and flatbreads.
Ensure consistent quality, texture, taste, and visual presentation during live service.
Engage professionally with customers when required in an open-kitchen environment.
Pastry & Cake Production
Assist the Head Chef / Pastry Chef in:
Cake preparation, baking, layering, filling, and finishing
Pastry, buns, and dough-based desserts
Support daily mise en place for pastries and cakes.
Follow standardized recipes, yields, and portion control for all pastry items.
Food Safety & Hygiene
Strictly follow
Dubai Municipality food safety and hygiene regulations
.
Maintain cleanliness and organization of the live station and pastry work areas.
Complete required records:
Chiller and freezer temperature logs
Cleaning and sanitization schedules
Apply FIFO, correct labeling, and proper storage procedures.
Kitchen & Team Support
Work closely with the Head Chef and kitchen team to meet daily production targets.
Assist in stock checking for pastry and bakery ingredients.
Minimize waste and report equipment or quality issues promptly.
Support peak service hours, promotions, and special events.
Requirements & Qualifications
Proven experience as a
Demi Chef - Pastry
,
Pastry Cook
, or
Bakery Chef
.
Hands-on experience with:
Cakes (basic sponge, cream cakes, fillings, finishing)
Pastry and bread dough preparation
Ability to work confidently in a
live station / open kitchen
.
Good understanding of food safety, hygiene, and HACCP practices.
Strong teamwork, time management, and attention to detail.
Physically fit and able to work standing for long hours.
Preferred (Advantage)
Experience with artisan bread, flatbreads, or tandoor baking.
Experience in cafes, bakeries, or hotel pastry sections.
Food Safety / HACCP certification.
