PAC - Production Assistant Coach
Job Title: Production Assistant Coach (PAC) - Kitchen
Reports To: Restaurant Manager / Unit Manager
Overall Purpose:
To lead the back-of-house (BOH) or kitchen operations. The PAC is responsible for efficient food production, maintaining kitchen equipment, managing food costs, and ensuring the kitchen team adheres to all safety, quality, and speed protocols.
Key Responsibilities:

• Kitchen Operations Management: Oversee all kitchen activities, including preparation, cooking, assembling, and order fulfillment. Ensure production levels match forecasted demand to ensure freshness and minimize waste.
• BOH Team Leadership: Supervise, train, and schedule kitchen Team Members. Focus on coaching for speed, accuracy, safety, and recipe adherence.
• Inventory & Cost Control: Manage kitchen inventory levels, conduct accurate stock counts, place orders, and control food costs through waste tracking and portion control.
• Equipment & Safety: Ensure all kitchen equipment is operated correctly and maintained. Uphold the highest standards of safety (food safety, kitchen safety, and occupational health) and conduct regular safety checks.
• Quality & Efficiency: Work closely with the QCC to maintain product quality. Optimize kitchen layout and workflows for maximum efficiency during peak and off-peak hours.

Key Performance Indicators (KPIs):

• Kitchen efficiency and order fulfillment time.
• Food cost percentage and inventory variance.
• Back-of-house food safety and cleanliness audit scores.
• Kitchen labor cost control and waste reduction metrics.
