Commis Chef - North Indian Cuisine

Key Responsibilities



Assist in the preparation and cooking of

North Indian dishes

such as curries, biryanis, tandoori items, gravies, rotis, parathas, and snacks. Prepare mise-en-place for assigned section (cutting, chopping, marination, grinding, etc.). Maintain consistency in taste, portion, and presentation as per the recipes. Follow daily production schedules given by the Chef. Support the Tandoor section when required. Maintain hygiene and sanitation standards as per HACCP/food safety requirements. Ensure proper storage, labeling, and rotation of ingredients. Assist in receiving and storing raw materials. Keep the work area clean, organized, and well-prepared at all times. Work closely with the team to ensure smooth kitchen operations during service.

Requirements



Minimum 1-2 years of experience in

North Indian cuisine

in restaurants/catering/banquet setup. Knowledge of North Indian spices, gravies, tandoor operations, and traditional cooking methods. Ability to handle pressure during busy operations. Good communication and teamwork skills. Flexibility to work in shifts and support other sections.

: South Indian Commis Chef

Key Responsibilities



Prepare and cook

South Indian dishes

such as dosa, idli, vada, sambar, rasam, poriyal, chutneys, Kerala curries, biryanis, etc. Handle dosa batter preparation, fermentation, and consistency. Prepare chutneys, sambar, and breakfast items with authentic taste. Follow recipes strictly to maintain quality and standardization. Maintain daily mis-en-place and assist with production for buffets and catering. Ensure high standards of cleanliness and food safety within the workstation. Monitor inventory levels and inform seniors for replenishment. Ensure proper storage and handling of ingredients. Assist in preparation for large-scale catering orders when required.

Requirements



Minimum 1-2 years of experience in

South Indian cuisine

. Strong understanding of Kerala, Tamil, Andhra, or Karnataka cooking styles. Experience with dosa tawa operation, breakfast cooking, and South Indian gravies. Ability to work efficiently in fast-paced kitchen environments. Good interpersonal skills and willingness to support other sections.
