Overview:
Sous Chef supports the Head Chef in managing kitchen operations, ensuring high-quality culinary standards for Indian and Mexican cuisine. Responsible for food preparation, kitchen management, team supervision, and maintaining hygiene and safety standards in accordance with Dubai Municipality regulations.
Key Duties and Responsibilities:
1. Food Preparation and Production
Assist the Head Chef in menu planning, recipe development, and food costing for both Indian and Mexican dishes.
Prepare, cook, and present Indian and Mexican dishes according to authentic recipes and restaurant standards.
Ensure consistent taste, quality, and presentation of all menu items.
Supervise the preparation of sauces, spice blends, marinades, salsas, and chutneys.
Innovate dishes to cater to local and international tastes while maintaining authenticity.
2. Kitchen Management
Oversee daily kitchen operations in the absence of the Head Chef.
Monitor stock levels, order supplies, and manage inventory for both cuisines.
Ensure proper storage and rotation of ingredients to minimize waste.
Implement standard operating procedures for food handling and hygiene.
3. Team Leadership
Supervise, train, and mentor junior chefs, line cooks, and kitchen staff.
Delegate tasks efficiently to ensure timely service.
Foster a positive and collaborative work environment.
Conduct regular performance reviews and provide constructive feedback.
4. Quality Control
Monitor portion control, presentation, and consistency of dishes.
Ensure adherence to HACCP and Dubai Municipality food safety regulations.
Conduct regular checks on kitchen equipment and cleanliness standards.
Address guest complaints related to food promptly and professionally.
5. Administrative Duties
Assist in budgeting, cost control, and labor management.
Maintain records of food purchases, wastage, and inventory.
Collaborate with management to plan special events, catering, or promotions.
Contribute to menu updates and seasonal recipe changes.
6. Compliance and Safety
Maintain a clean, organized, and safe kitchen environment.
Ensure proper handling of hot, sharp, and heavy kitchen equipment.
Conduct regular fire safety and hygiene drills with kitchen staff.
7. Skills and Qualifications
Proven experience as a Sous Chef in Indian and/or Mexican cuisine.
Strong knowledge of spices, herbs, and traditional cooking techniques.
Leadership and team management skills.
Knowledge of Dubai food safety regulations.
Ability to work under pressure in a fast-paced environment.
Creativity and passion for delivering authentic and innovative dishes
Job Type: Full-time
Pay: AED3,000.00 - AED3,200.00 per month
