Our client is a fast growing meat processing factory based in Dubai.

We are recruiting a UAE experienced meat production manager specializing in meat for Turkish doner kebabs to join their Dubai factory.

Reporting to the CEO, the role is responsible for creating new gourmet meat and poultry recipes based on emerging trends and run the meat processing production facility efficiently and cost effectively.

The successful candidate will have 5+ years\xe2\x80\x99 experience in fresh and frozen meat, poultry or seafood processing production with strong experience in new recipes and product development.

Role Summary
  • Create unique new recipes to consistently achieve the highest food quality standards under high volume production conditions.
  • Contribute to the product development strategy for new recipes and product lines experimenting with new ingredients and flavours.
  • Conduct yield analysis tests for all ingredients to optimize taste and cost.
  • Build a database of recipes, costings and culinary SOPs.
  • Plan and organize employees to achieve production targets for each shift meeting defined recipe and quality standards.
  • Control wastage and ensure proper yield and trim and packaging specifications meet mandatory and company standards.
  • Maintain accurate inventory of raw materials and processed food products.
  • Collaborate with the food quality & hygiene officer to ensure all Dubai Municipality mandatory requirements related to ISO, HACCP, Halal, personal hygiene standards are adhered to by all employees in production.
  • Ensure all food sampling is carried out on raw materials, semi-finished and finished products.
  • Source new raw materials and ingredients.
  • Create and improve procedures and systems to optimize product machine efficiencies, reduce the defects, control wastage and maximize yield.
  • Ensure preventative maintenance and sanitation is carried out on all food processing and production equipment.
  • Lead the production team to foster a professional work environment promoting team work through employee training and development, performance management and continuous improvement.
  • Generate production reports to analyze efficiency, quality, compliance, wastage and yield.
Mandatory Skills & Experience
  • 5 years\xe2\x80\x99 UAE experience as a production manager in fresh, chilled and frozen meat, poultry or seafood production with strong experience in new recipes and product development.
  • 7 \xe2\x80\x93 10 years\xe2\x80\x99 experience in Turkish doner kebab recipe development for fresh, chilled and frozen prepared meals.
  • Chilled and frozen meat and poultry manufacturing to identify process improvement, waste and cost reduction and implement best practices in food production.
  • Leadership skills to effectively manage employees.
  • Proficient use of MS Office and capable to writing reports and keep track of costs and daily production targets.
  • UAE driving license is an advantage.
Candidate Profile
  • Currently living in the United Arab Emirates \xe2\x80\x93 must be able to live and work in Dubai.
  • Good command of English \xe2\x80\x93 must be able to read and write English.
  • Proactive, takes imitative and results driven; able to work in a fast-paced environment.
  • Professional work ethic with decent personal grooming standards.
Education & Certification
  • Diploma as a minimum
  • Level 3 in HACCP and Food Safety
