Working closely with chefs and F&B leadership, you will craft a sophisticated wine list that complements Pierchic's signature seafood offerings and enhances the luxury dining journey. Key Responsibilities
Curate and manage the restaurant\'s wine list, ensuring alignment with menu concepts and evolving guest preferences
Lead a team of sommeliers, providing training, daily briefings, and development to maintain excellence in service
Build supplier partnerships, negotiate rates, and manage inventory, stock rotation, and vintage planning
Drive wine sales through upselling techniques, strategic pricing, and personalized recommendations
Host wine tastings, dinners, and events to elevate the restaurant's profile and engage guests
Ensure compliance with health, safety, and hygiene standards related to wine storage and service
Job Requirements
Minimum 2 years of experience as Head Sommelier in a fine dining restaurant or luxury hotel
WSET Level 3 certification or equivalent wine qualification
Fluency in English; additional European language is an advantage
Familiarity with Microsoft Office, Micros POS, and Sevenrooms
Strong knowledge of global wines, vintages, food pairings, and guest psychology
Ability to lead a diverse team with poise, professionalism, and mentoring skills
