Position Overview
The Director of Food & Beverage is the strategic leader responsible for the entire F&B operation. This role demands a dynamic individual who can blend creative innovation with astute financial acumen to drive profitability, enhance guest satisfaction, and inspire a large, diverse team. You will be the driving force behind our culinary reputation, ensuring every dining experience is nothing short of extraordinary.
Key Responsibilities
Strategic Leadership & Innovation:

  • Develop and execute the annual F&B business plan, budget, and marketing strategy.
  • Drive innovation across all concepts, continuously reviewing and elevating the culinary and beverage offerings to maintain competitive advantage.
  • Identify market trends and pioneer new concepts to maximize revenue and market share.
Financial Performance:
  • Manage all financial aspects of the F&B division, including budgeting, forecasting, cost control (food, beverage, labor), and P&L management.
  • Analyze financial reports and implement strategies to optimize profitability while maintaining the highest quality standards.
  • Set and achieve key performance indicators (KPIs) for revenue, covers, average check, and profitability.
Operational Excellence:
  • Oversee the daily operations of all F&B outlets, including restaurants, bars, banquets, room service, pool/beach services, and club lounges.
  • Ensure strict adherence to the highest standards of service, hygiene, health, and safety (HACCP).
  • Implement and maintain standard operating procedures (SOPs) across all departments.
Guest Experience:
  • Champion a culture of exceptional guest service, ensuring all guest feedback is addressed promptly and effectively.
  • Personally interact with VIP guests and key clients to build relationships and ensure satisfaction.
  • Maintain a visible presence in all operational areas.
Team Leadership & Development:
  • Lead, mentor, and motivate a large team of managers and associates, fostering a culture of excellence, accountability, and continuous learning.
  • Drive recruitment, training, development, and performance management for the entire F&B division.
  • Build a cohesive and high-performing leadership team.
Supplier & Vendor Management:
  • Negotiate contracts with suppliers and vendors to ensure quality products at the best possible cost.
  • Build and maintain strong relationships with partners and purveyors.

Candidate Requirements ?
  • Proven Track Record: A minimum of 2-3 years in a Director of Food & Beverage role within a large, luxury 5-star hotel or resort.
  • Geographical Experience: Essential strong background and understanding of the UAE and Dubai market. Combined with significant international F&B leadership experience.
  • Leadership: Demonstrated experience in leading large, multi-cultural teams across multiple outlets (e.g., high-volume F&B operation with 5+ outlets).
  • Financial Acumen: Expert-level skills in budgeting, P&L management, forecasting, and cost control.
  • Innovation: A passion for culinary and beverage trends, with a proven ability to conceptualize and launch successful new venues and concepts.
  • Guest Centricity: An unwavering commitment to creating memorable guest experiences.
  • Education: A degree or higher diploma in Hospitality Management or a related field is preferred.
  • Communication: Exceptional communication, presentation, and interpersonal skills.
