The Demi Chef de Partie - Sushi is responsible for assisting in the preparation and presentation of high-quality sushi dishes, ensuring consistency, freshness, and adherence to food safety standards. This role supports the Chef de Partie and helps maintain smooth operations in the sushi section.
Key Responsibilities:
Prepare, roll, and present sushi (maki, nigiri, sashimi, etc.) with precision and creativity.
Assist the Chef de Partie in daily kitchen operations within the sushi section.
Ensure all ingredients are fresh, properly stored, and prepared according to recipes and standards.
Maintain proper hygiene, sanitation, and cleanliness in compliance with HACCP and food safety standards.
Support in receiving, checking, and storing kitchen supplies and inventory for the sushi station.
Monitor portion control and minimize food wastage.
Collaborate with team members to ensure smooth service during peak hours.
Follow instructions of senior chefs while also taking initiative to learn and develop sushi techniques.
Requirements:
Previous experience in sushi preparation in a restaurant or hotel environment (minimum 1-2 years).
Knowledge of different types of sushi, fish handling, and Japanese culinary techniques.
Strong knife skills and attention to detail.
Ability to work under pressure in a fast-paced environment.
Knowledge of food safety and hygiene practices.
Team player with good communication skills.
