Commis (Junior Chef)
Position: Commis Chef
Department: Kitchen / Culinary
Reports to: Demi Chef de Partie / Chef de Partie / Sous Chef
Level: Entry-Level / Junior Culinary
1. Job Purpose (Summary)
The Commis Chef is an entry-level position in the kitchen brigade, responsible for learning and assisting in the preparation of food items according to established recipes and quality standards. This role is fundamental to maintaining the kitchen's workflow, organization, and cleanliness, providing a solid foundation for a career in the culinary arts.
2. Key Responsibilities
Food Preparation & Cooking:

  • Assist the Demi Chef de Partie and Chef de Partie in the daily preparation and cooking of menu items.
  • Perform basic cooking tasks such as chopping vegetables, preparing salads, making sauces, and butchering meats under supervision.
  • Learn and adhere to standard recipes, portion controls, and presentation specifications.
  • Operate kitchen equipment like blenders, mixers, slicers, and ovens safely and correctly.
Kitchen Maintenance & Sanitation:
  • Maintain impeccable cleanliness and hygiene in all sections of the kitchen.
  • Ensure all workstations are clean, sanitized, and organized before, during, and after service.
  • Properly store raw and cooked food items, following FIFO (First-In, First-Out) principles.
  • Assist in receiving and storing kitchen supplies and deliveries.
  • Wash and clean utensils, equipment, and work areas as required.
Team Support & Learning:
  • Support other kitchen team members during peak service times.
  • Actively learn different stations (e.g., garde manger, patisserie, butchery) as part of culinary development.
  • Follow instructions from senior chefs promptly and efficiently.
  • Adhere to all health, safety, and food hygiene regulations at all times.
3. Qualifications & Requirements
  • Education: A high school diploma or equivalent. A culinary school certificate or diploma is a strong advantage.
  • Experience: Little to no professional experience required; training will be provided. A strong passion for cooking and a desire to learn are essential.
  • Skills:
  • Basic knowledge of food handling and preparation techniques.
  • Ability to work efficiently in a fast-paced, high-pressure environment.
  • Strong teamwork and communication skills.
  • Physical stamina to stand for long periods and lift heavy items (e.g., stock pots, food crates).
  • Willingness to work early mornings, late evenings, weekends, and holidays.
