Skills Required:

A Commis works under the direct supervision of the Sous Chef or Chef de Partie or Demi Chef de Partie. The ideal candidate should have a passion to develop and improve their own skills in order to progress in the industry. Working as a Commis chef involves learning a lot of different skills in a short amount of time and then
practicing those skills by implementing them in actual tasks throughout the kitchen. He needs to possess the following skills:-

Develop and maintain positive working relationships with others; support team to reach common goals; listen and respond appropriately to situations. Ensure adherence to quality expectations and standards. Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance. Proven ability to work with a team and to follow instructions willingly. Good communication and interpersonal skills in English language. Able to maintain a sustained level of concentration in a high pressured environment ensuring quality in all food production and service is consistent with the Hotel standards. Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes. Maintains the technical skills within culinary ranking: speed, efficiency and time management are at the core of cooking competencies.
Duties & Responsibilities:

Assist during the preparation, cooking and presentation of food to the agreed and established standards. Prepare and cook food to the highest standards to ascertain an efficient food service. Follow standard recipes, presentation of all dishes at all times. Cleaning, peeling, cutting and carving of all food items according to the company's standard and assuring efficient food service. Commis will be asked to keep track of what supplies they use to aid in re-ordering supplies as necessary. Commis will be responsible for maintaining their work area, ensuring that all items are appropriately cleaned and ready for use before and after each shift. During food service, the Commis is responsible for keeping the station in working order and fully stocked. The Commis is responsible for preparing items prior to a meal service, such as chopping vegetables, cutting, precooking and marinating meat, or cleaning seafood. The Commis is responsible for ensuring that the kitchen meets sanitation standards as set by the Senior Chef in addition to maintaining local Health Department regulations. The appearance of the entire personnel reflects the reputation and image of the Company; therefore a great deal of emphasis is placed on a professional appearance. Ensure that all food items prepared and served are according to established standards and practices. Minimize spoilages and utilize food surpluses. Recommend changes in the Menus to the Senior Chef or Chef de Partie. Maintain the highest standard of personal appearance and hygiene at all times. Awareness of all fire, safety and emergency procedures. Available to work overtime, if requested depending on the volume of business. To participate in any Training/Developments schemes as recommended by Senior Management.
