Assist the kitchen team in preparing and plating REIF's kushiyaki, ramen, sandos and small plates at the Time Out Market outlet. Support fast, consistent output while maintaining hygiene, portion control and recipe standards set by the Head Chef.
Key responsibilities
Prepare mise-en-place for assigned station(s) (skewers/kushiyaki, grill, fry, cold, or noodle station) following Reif recipes and portion controls.
Thread, season and maintain kushiyaki skewers; operate and manage charcoal/grill or salamander to deliver consistent charring and cook times.
Execute basic dishes (sandwiches/sandos, small plates, simple ramen tasks) to standard under supervision.
Follow recipe cards, plating guides and time/temperature controls exactly.
Assist with receiving, inspecting and storing deliveries; rotate stock and mark items with prep/use-by dates.
Maintain strict hygiene, cleaning and waste controls; clean and sanitize station and equipment at shift end and during service as required.
Label, store and FIFO ingredients; accurately log prep quantities and wastage.
Work efficiently during peak service times to ensure run-of-service targets (speed + quality) are met.
Support cross-training: cover other stations when required (e.g., tempura, noodle, cold station).
Attend daily briefings; learn from station chefs and participate in training sessions.
Skills & qualifications
Culinary diploma or certificate preferred (or demonstrable kitchen experience).
6 months - 2 years' experience in a professional kitchen; experience with Japanese/izakaya/kushiyaki or grill stations is a plus.
Basic grill/charcoal experience, good knife skills and competent with portion control.
Able to work in a fast-paced, high-volume food-hall environment and maintain quality under pressure.
Knowledge of food safety and HACCP fundamentals; Dubai/UAE hygiene awareness preferred.
Team-player attitude, punctual, reliable, and coachable.
Physical fitness for standing long shifts and lifting prep boxes.
