Role Summary
The Commis Chef supports the kitchen team in preparing dishes that meet Accor's quality and presentation standards. The role requires enthusiasm, attention to detail, and a passion for culinary excellence in a fast-paced hotel environment.
Key Responsibilities

  • Prepare and maintain an accurate inventory list for the assigned station.
  • Follow standard recipes, portion sizes, and plating guides consistently.
  • Support other kitchen sections as required, demonstrating flexibility and teamwork.
  • Ensure that ingredients meet quality and freshness standards before preparation.
  • Assist in food promotions, special events, and menu updates.
  • Control food wastage and contribute to cost management without compromising quality.
  • Maintain cleanliness and hygiene in all food preparation and storage areas.
  • Record daily production, waste, and temperature logs as required.
  • Communicate effectively with supervisors and colleagues to ensure efficient kitchen operations.
  • Support Executive Sous Chef with recipe costing, food orders, and supplier quality checks.
  • Ensure compliance with food safety, sanitation, and health regulations.
  • Attend regular training sessions to enhance skills and culinary knowledge.
  • Display professionalism, punctuality, and adherence to grooming standards.
  • Assist in maintaining kitchen equipment in proper working condition.
  • Perform additional duties as assigned to support the team and operations.
Candidate Requirements
  • Diploma or degree in culinary arts or vocational hospitality.
  • Fresh graduate or up to 1 year of experience in a 4- or 5-star hotel kitchen.
  • Strong knowledge of basic cooking techniques and kitchen operations.
  • Ability to work efficiently under pressure and multitask.
  • Team-oriented with good communication and interpersonal skills.
  • Passion for cooking, creativity, and commitment to food quality.
  • Understanding of food safety and hygiene practices.
  • Flexibility to work shifts, weekends, and holidays.
  • Proficiency in English; additional languages are an advantage.
