To assist in the preparation, production, and presentation of sushi items while maintaining high standards of hygiene, consistency, and food quality. Supports senior chefs and ensures smooth daily operations of the sushi counter.
Key Responsibilities
Food Preparation & Production
Assist in preparing sushi ingredients including rice, fish, vegetables, and condiments.
Support in making basic sushi items such as maki rolls, nigiri, and sashimi under supervision.
Follow recipes, portion controls, and presentation standards provided by senior chefs.
Ensure all mise-en-place is prepared on time for service.
Operational Support
Maintain cleanliness and organization of the sushi section at all times.
Assist in receiving and properly storing raw materials following FIFO procedures.
Ensure all tools, knives, and equipment are safely handled and properly maintained.
Follow all kitchen SOPs and support kitchen operations during peak hours.
Health, Safety & Hygiene
strictly follow food safety and HACCP guidelines.
Ensure proper labeling, storage, and rotation of ingredients.
Maintain personal hygiene and grooming standards at all times.
Teamwork & Communication
Work closely with senior chefs to support smooth workflow.
Communicate ingredient shortages or equipment issues promptly.
Assist teammates as required during busy periods.
Qualifications & Skills
Minimum 1 year kitchen experience (sushi experience preferred).
Basic knife-handling skills.
Understanding of Japanese ingredients and sushi basics is an advantage.
Ability to work under pressure and follow instructions.
Positive attitude, teamwork skills, and willingness to learn.
Physical Requirements
Ability to stand for long hours.
Ability to safely handle sharp tools and perform repetitive tasks.
