Commis 1 (Fine Dining)
Job Title: Commis 1 Chef
Department: Kitchen (Fine Dining Restaurant)
Reports To: Chef de Partie / Sous Chef
Job Summary:
The Commis 1 is an entry-level chef who supports the CDP and station chefs in a fine dining environment. They are focused on learning fundamental cooking techniques, maintaining cleanliness, and preparing basic ingredients to the exacting standards of a fine dining kitchen.
Key Responsibilities:

• Preparation: Perform basic food preparation tasks as directed by senior chefs (e.g., washing, peeling, chopping vegetables, preparing sauces, butchering meats).
• Mise en Place: Assist the CDP in preparing the station for service, ensuring all ingredients are prepped and available.
• Learning: Actively learn and practice cooking techniques, recipes, and plating styles specific to the fine dining restaurant.
• Station Support: During service, assist the CDP by fetching items, finishing plates, and keeping the station clean and organized.
• Cleanliness: Clean work areas, equipment, and utensils, and adhere to all food safety standards.
• Stock Rotation: Assist in receiving and storing deliveries, ensuring the "first in, first out" (FIFO) rule is followed.

Qualifications & Skills:

• Culinary school certificate or diploma is highly desirable.
• Some previous experience in a kitchen environment is beneficial but not always required; a strong willingness to learn is essential.
• Basic knowledge of cooking techniques and food handling.
• Ability to follow instructions precisely and work as part of a team.
• High level of enthusiasm and a strong work ethic.
