Behind the scenes, you\xe2\x80\x99ll ensure quality, maintain high standards and keep the kitchen running smoothly.

A little taste of your day-to-day

Every day is different, but you\xe2\x80\x99ll mostly be:
  • Making every single meal a feast for the eyes and treat for the tastebuds.
  • Directing daily kitchen activities as well as coaching and developing a team capable of catering to more than 500 people
  • Encouraging and addressing guest feedback
  • Helping our EAM i/c of Food and Beverage plan events
  • Working closely with the finance team to forecast, plan and budget.
  • Managing all functions of the Food Production operations to achieve optimum departmental profit.
  • Managing all functions of the Food Production and Stewarding operations to achieve the optimum quality level of food production and sanitation.
  • Overseeing special events and special food promotions
  • Issuing recipes and maintaining up-dated and accurate costing of all dishes prepared and sold in the Food and Beverage operation.
  • Developing new dishes and products, takes steps to ensure that outstanding culinary technical skills are maintained.
  • Maintaining comprehensive product knowledge including ingredients, equipment, suppliers, markets and current trends and make appropriate adjustments to kitchen operations accordingly.
  • Controlling and analysing, on an on-going basis, the level of the following:
+ Sales
+ Costs
+ Issuing of food
+ Quality and presentation of food products
+ Condition and cleanliness of facilities and equipment
+ Guest satisfaction
+ Marketing
  • Developing with the EAM i/c of Food and Beverage popular menus offering guests value for money in accordance with IHG guidelines
  • Planning and organizing with the EAM i/c of Food and Beverage successful Food and Beverage activities in the hotel and overseeing them
  • Attending and participating in other meetings as required by the administrative calendar.
  • Keeping an up-dated Hotel Policies and Procedures file and up-dated files on the following Food Production matters:
+ Recipes
+ Finance
+ Standards
+ Personnel and Training
+ Outlets
+ Promotions
+ Meetings
+ Projects
+ Material and Equipment
+ Miscellaneous
  • Setting Food Production and Stewarding goals and develops strategies, procedures and policies.
  • Setting standards of all food and equipment purchases in accordance with IHG guidelines.
  • Monitoring local competitors and compare their operation with the hotel Food and Beverage operation.
What we need from you
  • Degree or certificate in culinary arts
  • Minimum of 3 years senior management experience in a large Food & Beverage department of a luxury deluxe hotel
  • High level of written and verbal Business English capability
  • Thorough knowledge of MS Word, MS Excel and MS Outlook is essential.
  • Experience with financial budgeting is essential.
