Prepare and present salads, cold appetizers, dressings, sauces, and cold platters according to approved recipes and standards.
Maintain high standards of
quality, taste, presentation, and portion control

Strictly comply with
food safety, hygiene, and HACCP standards

Organize daily work within the section and supervise commis chefs and assistants.
Ensure proper
receiving, storage, and handling of raw materials
following FIFO/FEFO principles.
Monitor stock levels, minimize waste, and report shortages or spoilage.
Maintain cleanliness and proper sanitation of workstations, equipment, and cold storage areas.
Coordinate with the
Sous Chef and Executive Chef
regarding prep, menus, and service requirements.
Assist in menu development, cost control, and continuous improvement of cold kitchen items.
