Take complete responsibility for assigned section (Pasta / Hot / Cold / Breakfast / Grill / Pantry)
Prepare and execute dishes strictly as per
DIMO'S standardized recipes and plating guidelines
Ensure consistency in
taste, presentation, portion size, and speed
Plan and manage mise-en-place for breakfast, all-day dining, and late-night service
Team Leadership & Supervision
Supervise Demi Chefs and Commis Chefs within the section
Train junior staff on recipes, SOPs, hygiene, and kitchen discipline
Assign tasks, monitor performance, and maintain service efficiency during peak hours
Kitchen Operations & Cost Control
Ensure smooth and timely food service during high-volume periods
Monitor daily stock usage, wastage, and report shortages to Sous Chef
Enforce FIFO, labeling, portion control, and correct storage practices
Maintain food cost discipline aligned with DIMO'S operational standards
Hygiene, Safety & Compliance
Ensure strict compliance with
Dubai Municipality, HACCP, and food safety regulations
Maintain cleanliness and organization of the assigned section at all times
Ensure proper use, cleaning, and maintenance of kitchen equipment
Enforce grooming, uniform, and hygiene standards among team members
Coordination & Brand Standards
Coordinate closely with Sous Chef, service team, and bar for smooth service flow
Support special orders, events, promotions, and menu updates
Uphold DIMO'S brand promise of
premium quality, consistency, and guest satisfaction
Diploma or Certificate in Culinary Arts / Hotel Management (preferred)
HACCP or Food Safety Certification (mandatory or strong advantage)
Experience
4-7 years
experience in a professional kitchen
Minimum
1-2 years as Chef de Partie or Senior Demi Chef
Strong experience in
Italian / Continental / Cafe kitchens
UAE experience is highly preferred
Skills & Competencies
Strong section handling and advanced cooking skills
Leadership ability to manage and train junior chefs
High attention to detail in plating and consistency
Ability to perform under pressure during peak and late-night hours
Cost control, wastage management, and inventory awareness
Physical & Work Conditions
Ability to stand for long hours
Comfortable in fast-paced, high-temperature kitchen environments
