Job Description

Job Summary:
The Chef de Partie (CDP) is responsible for managing a specific section of the kitchen (e.g., sauces, grill, pastry, etc.), ensuring high-quality food preparation, maintaining hygiene standards, and supporting junior staff. The CDP must have strong culinary skills, leadership abilities, and the capacity to work efficiently in a fast-paced environment.
Key Responsibilities:
1. Food Preparation & Cooking:

  • Prepare, cook, and present dishes according to restaurant standards and recipes.
  • Oversee a specific section (e.g., appetizers, main courses, desserts) and ensure consistency in taste, quality, and presentation.
  • Monitor stock levels, order supplies, and minimize waste.
2. Kitchen Operations:
  • Ensure all dishes are prepared on time and meet quality standards.
  • Maintain cleanliness and organization of the assigned station.
  • Follow food safety and hygiene regulations (HACCP).
3. Team Leadership & Training:
  • Supervise and guide Demi Chefs and Commis Chefs in the section.
  • Assist in training new staff and maintaining a positive work environment.
4. Compliance & Safety:
  • Adhere to health, safety, and sanitation policies.
  • Ensure proper storage and labeling of food items.
