The Chef de Partie is responsible for managing a specific section of the kitchen, ensuring high-quality food preparation, consistency, and timely service. This role requires strong culinary skills, the ability to work under pressure, and effective coordination with the kitchen team.
Key Responsibilities
Food Preparation & Cooking
Prepare, cook, and present dishes according to the restaurant's standards.
Manage a designated section (e.g., grill, saute, pastry, cold kitchen).
Ensure all dishes are prepared accurately, consistently, and in a timely manner.
Section Management
Set up and stock the station with all necessary supplies.
Maintain cleanliness and organization of the workstation.
Ensure all food items are stored and handled in compliance with hygiene standards.
Quality & Standards
Follow recipes, portion controls, and presentation standards.
Conduct regular checks on food quality, taste, and appearance.
Ensure compliance with food safety, HACCP, and sanitation guidelines.
Coordination & Communication
Work closely with Sous Chef and Head Chef to plan daily production.
Communicate effectively with kitchen teammates to ensure smooth service.
Assist in training and guiding Commis Chefs and junior staff.
Inventory & Cost Control
Monitor stock levels and communicate shortages to the Sous Chef.
Reduce waste, maintain portion control, and practice cost-effective cooking.
Assist in stock rotation (FIFO) and ingredient management.
Required Skills & Qualifications
Culinary diploma or equivalent professional training.
2-4 years of kitchen experience, preferably in a similar role.
Strong knowledge of cooking techniques, food preparation, and kitchen equipment.
Ability to handle pressure and work in a fast-paced environment.
Strong sense of hygiene, safety, and attention to detail.
Good communication and teamwork skills.
Preferred Qualifications
Experience in fine-dining or high-volume restaurants.
Knowledge of international cuisines or specialized cuisine areas.
Ability to train and mentor junior staff.
Physical Requirements
Ability to stand for long periods.
Ability to lift and carry items up to 20-25 kg.
Manual dexterity and stamina for fast-paced work.
