Job Summary:

Dubai Marine is looking to hire passionate and enthusiastic Chef De Partie (Cold Kitchen) who is responsible for overseeing the preparation and presentation of all cold kitchen items such as salads, appetizers, dressings, sandwiches, canapes, and cold buffets. This role ensures food quality, hygiene, and consistency in accordance with hotel standards.

Key Responsibilities:

Prepare and present cold dishes in line with menu standards and guest expectations

Supervise and train commis chefs and junior staff in the cold kitchen section

Ensure all food preparation is done according to HACCP and hygiene standards

Assist in planning and developing new cold menu items and seasonal specials

Monitor inventory and requisition supplies as needed

Ensure proper storage and labeling of all ingredients and finished products

Maintain cleanliness and organization of the cold kitchen area

Work closely with other kitchen sections to ensure smooth kitchen operations

Minimize waste and contribute to cost control

Diploma or certification in Culinary Arts

Minimum 2-3 years of experience in a similar role, preferably in a hotel or resort

Strong knowledge of cold food preparation and presentation

Familiarity with food safety standards and HACCP procedures

Good communication and team leadership skills

Attention to detail and creativity in food presentation

Flexibility to work in shifts, weekends, and holidays

Requirements:

Minimum 2-3 years of experience in a similar role, preferably in a hotel

Strong knowledge of cold food preparation

Culinary diploma or relevant certification

Team player with good communication skills

Flexible with shifts, weekends, and holidays
