Chef Commis - Pizza Section
Position Summary:
We are looking for an energetic and dedicated Chef Commis to support our bustling Pizza Section. You will be at the heart of our open kitchen, learning the art of dough management and pizza crafting from our experienced Pizzaiolos. This is a hands-on role perfect for someone who thrives under pressure and takes pride in creating a perfect, high-quality product.
Key Responsibilities:

  • Dough & Base Preparation:
  • Assist in the daily production of pizza dough, following precise recipes and techniques.
  • Scale, ball, and proof dough to perfection, managing fermentation times.
  • Prepare and restock all pizza sauces (e.g., classic tomato, bianca) and base ingredients.
  • Mise en Place & Toppings:
  • Perform extensive prep work: grating cheeses, slicing meats (e.g., pepperoni, salami), and preparing fresh vegetable toppings.
  • Ensure all topping stations are fully stocked, organized, and clean before, during, and after service.
  • Service Support:
  • Work alongside the Pizza Chef to stretch dough, apply sauces, and add toppings accurately and efficiently.
  • Monitor pizzas in the wood-fired or electric oven, learning to identify the perfect bake.
  • Assist in finishing pizzas with fresh herbs, oils, and other garnishes.
  • Maintain the cleanliness and temperature of the pizza oven station.
  • Quality and Consistency:
  • Ensure every pizza meets our standards for crust quality, topping distribution, and final presentation.
  • Help maintain strict portion control and minimize waste.
  • Adhere to all food safety standards, particularly concerning dough handling and cross-contamination.
Qualifications & Desired Skills:
  • Culinary school graduate or previous experience in a fast-paced kitchen; pizza experience is a significant plus.
  • Interest in learning the science of dough fermentation and pizza-making techniques.
  • Ability to work in a hot, high-pressure environment.
  • Good physical stamina to stand for extended periods and handle a fast-paced service.
  • Strong organizational skills and the ability to multitask.
  • Team player with a positive attitude and a willingness to learn.
  • Basic knowledge of food safety practices.

  • Flexibility to work evenings, weekends, and holidays as required.
  • Positive, can-do attitude and a strong desire to learn and grow within the culinary field.
  • Ability to take direction and constructive criticism positively.
