Chef Commis - Cold Section (Greek/Mediterranean Focus)
Position Summary:
We are seeking a passionate and meticulous Chef Commis to join our dynamic cold kitchen brigade. In this role, you will be instrumental in preparing the vibrant, fresh, and authentic flavors of our Greek and Mediterranean menu. You will support the Chef de Partie in all aspects of the Cold Section (Garde Manger), ensuring the highest standards of quality, presentation, and hygiene are met for all cold dishes, from appetizers to desserts.
Key Responsibilities:

  • Preparation of Cold Dishes:
  • Mise en Place: Expertly prepare all necessary ingredients for service, including washing, peeling, cutting, and chopping vegetables, herbs, and fruits.
  • Assemble and plate cold appetizers such as Tzatziki, Taramasalata, Melitzanosalata, and Dakos.
  • Prepare traditional Greek salads (Horiatiki), pasta salads, and grain-based dishes like couscous and quinoa salads.
  • Assist in the preparation of cured meats, seafood, and cheese platters.
  • Support the pastry team with basic elements for Mediterranean-inspired desserts.
  • Quality and Consistency:
  • Taste all prepared items to ensure consistency in flavor, seasoning, and adherence to traditional recipes.
  • Maintain portion control and presentation standards for every dish that leaves the kitchen.
  • Ensure all products are fresh, properly rotated, and stored according to FIFO (First-In, First-Out) principles.
  • Station Maintenance:
  • Maintain impeccable cleanliness and organization of the cold section, including workstations, counters, refrigerators, and all equipment.
  • Monitor and record temperatures of cold storage units.
  • Ensure compliance with all HACCP and food safety regulations.
Qualifications & Desired Skills:
  • Culinary school graduate or equivalent experience in a professional kitchen.
  • A genuine passion for Greek and Mediterranean cuisine.
  • Knowledge of traditional ingredients and flavor profiles (e.g., olive oils, oregano, mint, feta, phyllo dough).
  • Keen eye for detail and artistic presentation.
  • Ability to work efficiently in a fast-paced environment.
  • Strong teamwork and communication skills.
  • Basic knowledge of food safety and sanitation practices.
