The Chef de Partie (CDP) Baker is a hands-on leadership role responsible for managing a specific section of the bakery production (Sourdough/Bread or Viennoiserie). The ideal candidate is a highly skilled artisan who ensures that every product leaving their station is consistent, high-quality, and follows the "Bakerist" standards. They will supervise junior bakers and maintain seamless workflow during their shift.
Key Responsibilities:
1. Production Execution:
Technical Mastery:
Take full ownership of the assigned station (e.g., dough mixing, shaping, lamination, or oven management).
Artisan Standards:
Maintain perfection in sourdough fermentation, crumb structure, and the delicate lamination of viennoiserie.
Consistency:
Ensure all recipes and techniques are followed precisely as per the Head Baker's instructions.
2. Section Management:
Daily Prep:
Organize the "mise-en-place" for the shift and manage the production timeline to ensure fresh products are ready for opening.
Waste Control:
Monitor ingredient usage and minimize wastage at the station level.
Training:
Directly supervise and train Commis (Junior) Bakers, ensuring they develop the necessary technical skills.
3. Quality & Hygiene:
Final Check:
Perform quality checks on all items produced in their section before they move to the next stage or the shop floor.
Food Safety:
Maintain a clean and organized workstation in strict accordance with Dubai Municipality and HACCP standards.
Candidate Requirements:
Experience:
Minimum 2 years in a professional artisan bakery. Previous experience as a Demi-CDP or CDP is preferred.
Technical Skills:
Strong experience with long-fermentation sourdough and high-hydration doughs. Proficiency in lamination (croissants, danishes) and manual shaping techniques.
Understanding of temperature control and its effect on yeast/starter activity.
Leadership:
Ability to lead a small team of 2-4 people under pressure.
Language:
Good communication skills in English.

Someone who notices if a croissant is 5 grams off or if the bread crust is slightly too pale.
