Purpose of the Role: The role of the Bar Manager is to control all aspects of the bar namely, cleanliness, staff training and development, cost control, developing and growing the businesses and stock. As well as this you are to be accountable for all that is detailed below.
Key Responsibilities
Set objectives and targets for beverage unit/bar
Determine staff needs and recruit staff with the help of HR and General Manager giving prompt and accurate feedback on all trial shifts
Performance manage staff keep up-to-date with reviews and 1-1s
Assess development needs and train and coach all guest facing staff on wet products
Monitor set standards quality and service standards for staff, direct and manage staff members to meet standards and objectives
Communicate company policy, standards and procedures to staff
Ensure staff operate within company policies
Oversee the preparation and presentation of beverages to meet set standards
Resolve customer complaints promptly
Monitor cleanliness and hygiene of bar area
Promote and practice compliance with fire, health, safety and hygiene standards and regulations
Ensure adherence to cash management procedures
Stay current with relevant legislation regarding service of alcohol, sale of tobacco and licensing
Financial Responsibilities:
Staffing Levels managed including costed rotas, holiday management and productivity management.
Stock ordering, receiving, storing, controlling and counting of all Beverage stocks.
Administration of all stocks including, invoice collation, price checking and data entry of stock.
Cost of Sale analysis and pro-active management of potentials using product mix reports
Cost of Sale -to be under the group target of 0.5% for all stock takes
Waste management for all wet stock
Training stock used in briefs and accounted for accurately.
Monitor and order supplies
Confirm that procurement of supplies is on the best possible terms
Make certain all deliveries are checked in correctly and documentation is correct
Check stock is correctly rotated and stored to reduce wastage
Organise and adjust staff rotas and schedules in accordance with available resources and labour regulations
Plan and implement cost control measures
Quality Control
Accurate receiving of goods, prep controls and daily par stock levels
Relaying information in daily briefs as to stock levels
Stock rotation and par level management
Drink presentation to specification and ensuring product consistency
Bar set up and Product Prep, opening and closing checklists implemented and checked daily/weekly
Drink Quality, weekly training sessions scheduled with agenda recorded, ensuring product consistency
Product Knowledge, weekly spec checks to be completed with results recorded
Bar service standards, achieving results of 90% and above on mystery diner bar section
Developing of Bar team
Oversee the bar display to maximize functionality and attractiveness
Plan and implement systems to maximize sales and revenue
Organize promotional activities
Generate and present financial reports
Creative Development
Specials Creativity, ensuring that each shift has a well thought out and presented special
Continually pushing the team to be familiar with current trends in the market
Working with the Directors and Specialists to introduce new products and drinks and be fully knowledgeable of all new wine menu developments
Implement improvements for products and service
